From my home, to yours.

So I finally got in the holiday spirit and put up my Christmas Tree! Today was a cooler day in the Phoenix area and I couldn’t have been happier! So when I got home from work yesterday, I made a special pot of coffee and when out in our storage closet to get out the Christmas decorations! img_7746

Naturally I thought we needed some Candy Cane coffee to get some Holiday pep in our bodies! When it was brewing the aroma of peppermint filled our apartment and my heart leaped with joy! I just knew I wouldn’t be able to suffer fluffing my tree limb for limb without my Door County Coffee in my hand!

For the longest time, I had a tree with white lights and since my wonderful cat loved laying on the bottom layer branches the tree was ruined so my husband bought me a new tree. I told him I wanted one with the big colorful bulbs and honestly I love this tree so much more than my other one. I think white lights look timeless and look good with whatever decorations you put on them, but a colorful tree is just so much fun. What do like?

I will have to admit I am not really religious, I believe in a lot of things, but I love celebrating Christmas because it is the one time of year that we can take a break from our hectic lives and celebrate our love from our families and friends. It is the one time of year people are giving, I don’t mean by gifts, but just by showing kindness to others.

My mom gave me this ornament when I moved out and it is my favorite. I consider my tree a Peace tree, a symbol for kindness, love and celebration of our lives.

We do have stockings too, mainly to fill them with candy, actually to only fill them with candy.

And I can’t forget about Elroy, the packer Elf on the Shelf that hangs from our lamp, he’s making sure that we earn our candy 🙂

Tis the season… for THE COMMON COLD!

Feeling under the weather? I have been lucky and haven’t caught any bugs yet, but last week my husband felt under the weather. To knock this cold out of his system I thought I would make him some super spicy soup to clear out his sinuses and to help his sore throat. So I made him some Spicy Veggie Soup with Egg Noodles. (I was eating it too so I made it vegetarian.) Honestly he loved it and let me tell you it was SPICY!! Wanna make it? This is what you’ll need:

  • 3 boxes of vegetable broth (I can’t remember the oz) (it’s not the cans it’s those tall rectangular boxes)
  • 1 bag egg noodles
  • cayenne pepper
  • Garlic (1 clove)
  • Salt + Pepper
  • Italian seasoning
  • basil and oregano (dried) (not much just a pinch)
  • 1 jalapeno
  • 1 box of mushrooms
  • 1 1/4 cup sliced carrots
  • 1 big broccoli crown
  • 3/4 red onion
  • 5 -7 small red potatoes

Alright ready for the easiest recipe ever?? Dice the potatoes and add it in the vegetable broth, also add the jalapeno (cut in big chunks) and let sit on medium low for about 2 hours. Add the seasoning too so it simmers with the broth, depending on how spicy you want the soup adjust the cayenne pepper to taste. I added a lot because we like spicy, however I thought it was a too spicy for me. After the potatoes are soft, then add all the other veggies and let it sit for another 30 minutes or so. Before you want to eat I would make the noodles, Depending if you want the soup brothy or chunky make as many noodles as you want. ( I am a pasta person so I made my bowl a little, ok a lot, chunky. )img_7500img_7503img_7511img_7506A side note too, I would add the noodles to each individual bowl so they don’t get soggy if you end up having leftovers (which you should, I made this for just my husband and I, and we had enough to feed 5 or 6 people)

Productive Sunday.

Good afternoon Friends!

I worked a double shift Thursday, Friday and Saturday so I am so happy to be home and getting things done around the house. My brother-in-law got me a vacuum for my birthday and so I had a hay day cleaning all the base boards and air vents today! I also cleaned out my fridge, washed and folded 4 loads of laundry, went to the store to get stuff to make dinner and now that my apartment looks and smells clean I am about to crack down on some studying for my exam I have in the morning. My first Spaghetti Squash.

Hello my friends!

About a week ago I made my first spaghetti squash and let me be honest, I was a little skeptical. I just couldn’t wrap my head around the idea that the inside really looking like noodles! But I was determined to find out what this whole squash craze is about. The grocery store had them on sale for 99 cents a pound, I only bought one because It looked big enough for my husband and I to share. Heres a list of everything I used to make my stuffed squash-

Goodies:

  • 2 squash (I had a lot of stuffing left over)
  • 1 broccoli crown (a good-sized one)
  • Spinach
  • Shredded carrots
  • 1/2 a red onion
  • A case of those cherry tomatoes
  • 1 Green pepper
  • Mushrooms
  • Pesto
  • Parmesan cheese
  • Mozzarella cheese
  • 1 pound of chicken (for my husbands half)
  • Olive oil
  • Salt
  • Pepper
  • Italian seasoning
  • Thyme
  • Rosemary
  • Garlic
  • ARTICHOKE HEARTS (YES, YES)

My suggestion is if you don’t want it too dry to make a light Alfredo sauce to go with it, I just wanted to really taste the squash and my veggies so I only used pesto.

So I had my husband cut the squash in half because I didn’t want to chop my arm off, next time I would maybe put the whole squash in the oven for 15 minutes then cut it in half to make it easier. DE-GUT THE SQUASH! Then, I got my Pyrex dish out and coated it lightly with olive oil, then I took my cooking brush and also covered my squash in oil too. Before I put it in the oven I did put some salt and pepper on the inside. Baked it for 30 minutes! While I was waiting for the squash to cook I chopped my veggies and threw them in the pan, just not the spinach you’ll do that before you stuff. Don’t forget to season your veggies too, I used italian seasoning with some rosemary, garlic and thyme.

I also cooked my husbands chicken in the pesto so it wasn’t dry and so it had some flavor, but be careful that it doesn’t splatter on you, IT BURNS. Yes I experienced it. Oh, the things I do for my love.

img_7302img_7303img_7301So here it is! I pulled it out of the oven after 30 minutes, grabbed my fork and went to town! This was so much fun and I couldn’t believe how easy it comes apart! Then, I just left the noodles in the squash, went back to my veggies, added the spinach and pesto and gave it a good mix. I used like half a jar of pesto (we are pesto people, I almost felt it wasn’t enough). If you want extra cheese then mix some in with the veggies too. Then add a layer veggies to the squash and then add some chicken and then another layer of veggies. Before I added the cheese I sliced the artichoke hearts into smaller pieces and out them on top of the veggies. Finally, top it with both cheeses and throw it back in the oven for another 15 minutes or until you think it is done. Most people will add the cheese on top before they take it out of the oven, but I like my cheese kinda crispy so I add it when I do everything else.

img_7304img_7307Then Da Da Da DAAAAAAA dinner is served! I loved it, my husband wish it had a sauce that why I recommend it, but I thought it was good just the way it was. I defiantly want to try stuffing it with other things next time! I guess I am on the spaghetti squash train now.

img_7433Good morning friends, its Friday! And I heard my first Hot Air Balloon this morning which means its going to be a good day! When the weather finally cools off every morning I will seriously JUMP out of my bed when I hear them turning on the gas to get heat going and go watch the balloons go right over our apartment. There will sometimes be over 7 of them right above my head. I have serious love for the Hot Air Balloons, I’ll have to tell you the story another time.

Good Day my Hippies!

Thoughts in my head, Lets catch up!

Hi my friends, I know I have been not posting as much because I am constantly studying or at work. It makes me feel good that people have been asking me why the lack of writing, because that means they are enjoying my stories.

I recently celebrated my 23rd birthday and it was a blast! My husband and best friend took me to pottery painting place and I painted a Fruit bowl for my kitchen and it turned out better than I thought!

Nothin’ else is really new with me except the new age! Although, I have been cooking a lot and many bottles of wine were sacrificed. 🙂 I can’t wait for my semester to be over so I can finally bake, I have found a lot of recipes I want to try.

There is one thing I guess I did want to talk about. I want to remind everyone what my blog is about. I think this is one of the most weird times in life for people in my age group. Half of the people are moved out of their parents house, or are moving back in, some people have gotten their degree and others are just starting school, people are having kids, and some are just losing their virginities, people are traveling the world and others are working their lives away just to pay rent. We are all still trying to figure out who we are, and honestly I think we are doing this for the rest of our lives, seeing what we like and don’t like. I guess where I am going with this, the reason why I always talk about my age, my life and what I do is because I want to show people who are around my age that we can do anything we set our minds too. I get all the time, “Oh you make such fancy food,” in reality all I do is follow a recipe. We have all been taught to read instructions since grade school and if I see something that looks yummy I make it and if the recipe looks a little difficult I modify it the way that is easiest for me to cook it. Now that I have made so many recipes I can whip up something in a flash with whatever I have in the fridge. I also get all the time “Well you are married, so you have to cook all the time,” and that is not the case at all. I cook because I want us to be healthy and we can’t afford to go out and eat every night of the week. I also like encouraging people to go out of their comfort zone, like this summer I tried yoga for the first time and I ended up loving it, I also didn’t wear makeup for 30 days. In the end, I like to think of myself as a realistic blogger. I am a normal 23 year old that works 35 hours a week, and goes to school. I don’t have a fancy camera to take amazing pictures the food I make, I also don’t have all white plates and all white countertops to make it look perfect, I don’t have this super flexible body to do all the different yoga poses, I do have pimples ( especially when I have an exam). I live in a 900 square foot apartment and most everything I have is hammy downs or used and I am OK with that. I am more than okay with it because that is what makes me different then everyone else. It makes me unique. I think to sum everything up, we are all still learning, so why can’t we do it together?
