Dear Tofu,

Dear Tofu,

I am sorry to say how displeasing you are to my taste buds and have you ever thought about going to the gym?! You are flabby, soggy and no matter how much I tried to crisp your top layer, you still made me feel like I was eating a slimy sock. So here is where we part ways and never come in contact again.

Oh my, that was a doozy I’m sorry you were in the middle of that, but I finally had to pull the trigger. I find so many recipes that require tofu, and seriously don’t understand the obsession with it. However, I did give in because I like to keep an open mind, but this was just on a whole other level of disgusting, crossed the line! Life does go on though and I still made dinner without the tofu.

I got the idea off Facebook, and kinda put my own spin on it. I would call this the Power Bowl because it is so well-balanced. What you’ll need:

  • Quinoa
  • Carrots (I used shredded)
  • Mixed greens
  • Sweet Potato
  • White onion
  • Green Beans
  • Broccoli
  • 1 can garbanzo beans
  • Garlic
  • Sriracha
  • Chili powder
  • Sea salt
  • Pepper
  • Onion powder
  • Paprika
  • Rosemary

I don’t have any exact measurements because I did this all on a whim, so trust your gut and go on a whim with me!

I cubed the sweet potato and threw it on the sheet pan with EVOO, salt, pepper, onion powder and dried rosemary, just give it all a good sprinkle, then spread the potatoes around the pan so everything has a good mix. I put them in the oven at 375 and when they were half way done I put the brocboli, green beans and onion on the pan. I also reseasoned the veggies and gave them another drizzle of EVOO.

Then, I started boiling the quinoa and started cooking the garbanzo beans on the stove with just a little water and EVOO, seasoned it with salt, pepper, paprika, sriracha and chili powder. Let it simmer for a couple of minutes and then eat up!

I put a little quinoa in a bowl, shredded carrots, mixed greens, veggies and garbanzo beans on top! It actually didn’t turn out half bad! img_0948img_0949img_0950

Now I will be honest, quinoa really has no flavor, but I like it because it is so good for you and I eat it so I have a different mix of whole grains in my diet. Being vegetarian I have really been trying to keep a wholesome diet and eat a lot of different foods so my body can absorb a variety of nutrients. Just being a smart thinker instead of a fart smeller, you feel?

Now that you made such a good healthy meal, kick your feet up and RELAX! I have been doing it all day, I just started This Is Us on Tuesday and I am almost caught up with the current season. I know, I’m obsessed, it’s almost unhealthy, however it hasn’t effected my school work so I don’t see a problem with it! Anyone else obsessed? I can’t wait to watch Jacks episode, I don’t know how I will handle it because I love his character so much, I also love Beth she is such a strong woman.

  1. Haha, I love tofu when done well, though I’ve had some soggy, chewy and/or bland messes too. I hated it when I first went veggie. I’m still not a fan of silken tofu – only firm!

    Quick question – did you press your tofu before cooking it? This squeezes out all the water meaning it won’t be soggy and it will soak up all the flavours you cook it in.

    On another note, your quinoa and chickpea bowl looks delicious! 🙂


    1. I thought about pressing a paper towel on it, but it was crumbling apart when I would touch it so I though I better leave it alone! Honestly this is my second time trying it and I don’t think it’s my thing, I get my full on lentils and beans and I like tempeh!
